The Fun Guy Mushroom Salad
This is such a fun potato salad, I had to share! Kids love it and it tastes great.
5 boiled potatoes
3 boiled eggs
1 onion (cooked or raw)
2 garlic cloves (cooked or raw)
1/2 cup homemade mayo (see recipe below)
1 celery stalk chopped
2 tbsp chopped pickles (my sister prefers dill pickles, some like it sweet)
Salt, Pepper to taste
Garnishment for Mushroom
1 tbsp each; garlic chives, parsley (optional)
1 shredded carrot
2 room temperature eggs,
1/2 c olive oil,
1/4 tsp lemon juice,
pinch of salt and pepper
Blend all ingredients with an immersion blender
Instructions for Potato Salad
Boil potatoes and eggs. Chop into chunks as desired. Mix together the mayo, onion, and herbs. Fold in gently with potatoes and eggs. Add salt and pepper.
Now for the fun part!
Wash your hands, everyone, this is not for the squeamish. Fold the Potato salad onto a large size platter. Shape into any shape you like! This photo is a mushroom. Take the shredded carrots and press gently to cover the top part of the mushroom. Use a clean rag or paper towel and carefully remove all stray potatoes and carrots. Use sprigs of garlic chives for grass. Half a tomato or roasted red pepper for the lady bug and press olive pieces/peppercorns/ or cloves for dots. Use a parsley leaf for the lady bug leaf.
Use Your Imagination. Children love to eat and help prepare.
