The Soda
Well, as you know, dropping habits like soda doesn’t come easy. No big deal for the children who were young enough to never taste the addictive qualities of sugar! But the adults struggle…
The Solution
All good things have a healthy beginning or replacement. Soda is no exception. Actually a few hundred years ago it is documented how society made all sorts of fermented beverages. It is vital to have these ferments along with our meals in order to digest our meals more productively!
Soda can be made with almost any flavor you like in the store. You just need to take the time to figure out your taste preferences. Add a little more sweetener for the ferment, and voila!
Here is a family favorite that we also sell at the Farmer’s Market:
4-Ingredient Beverage Recipe
Lavender Lemonade Soda Beverage
Everyone is different, so be sure to taste and modify before you ferment. Remember it needs to be a little sweeter than normal to feed the ferment. We use organic non-GMO when you have the option.
1 C Freshly Squeezed Lemons
1 C Raw local Honey + a bit more (1/4 c) to feed the fermenting process
1-2 Tbsp Whey or Ginger Bug or Saurkraut juice
1 1/2 Gallons of pure, clean, dechlorinated Water
Well, really 5 ingredients if you choose the Lavender! Be sure to use the least synthetic, food grade oil. Contact us for what we use.
2 drops of lavender essential oil
Simple Directions
Pour all of the ingredients into a glass container(s). Leave the space. It seems to allow the ferment to happen better and faster.
Tip: put honey in measuring cup with lemon juice and gently stir to thin the honey for easier pouring.Put the lid on, then shake to agitate and stir a bit more. We love this jar for family times and these jars with guests. It makes a great hostess gift as well!
Simply close the metal lever or if you have a cap, gently unscrew the lid the tiniest bit to allow for some escape so you don’t have a volcanic experiment. However, you do want to leave it on snug in order to capture the CO2 that naturally occurs to give the coveted fizz.
Depending on your climate, leave this out for 1-3 days. You can taste test during the process by pouring a bit into a cup until desired fizz.
When desired balance of sweet and fizz is obtained, simply place the jar in the refrigerator with the lid on.
